Vegetable Rice Recipe is an Indian cuisine. This is an easy cooking recipe made with mild spices and various types of vegetables. Vegetable Rice is one of the most common rice dishes that are often made in most Indian homes. It is also the one most common menu for parties or celebrations. There are various ways of making vegetable rice. Here I am sharing a simple recipe that goes well in lunch box or for a quick meal or for a party. This vegetable rice recipe is ridiculously easy to make and can be served alone without any side dishes.
There are various types of rice such as pea rice, chicken rice, rice with coconut milk and the basic one is made with mixed vegetables. But you can add any vegetable of your choices like carrot, peas or cheese, eggs or even chicken.
It is another time saving recipe that you can have it in your lunch or dinner. It needs only 20 minutes to cook and you can easily prepare it within 15 minutes! So, you can make the dish ready within 35 minutes. You can serve this vegetable rice with 3 to 4 people.
Ingredients for making vegetable rice recipe (I use a cup of 240 ml):
For making vegetable rice you need to prepare:
- 1 and a half cup of basmati rice or any fragrant rice
- 1 and a half to 2 table spoon of vegetable oil or ghee
- 1 curry leaf
- half to three fourth tea spoon of cumin seeds
- 3 to 4 green cardamoms
- 6 garlic cloves
- 2 inch of cinnamon stick
- One fourth tea spoon of fennel seeds powder
- 1 thinly sliced medium onion
- 2 green chilies slit
- 1 and a half tea spoon of ginger garlic paste
- handful of finely chopped mint
- 1 to 1 and a half cups of chopped vegetables
- salt as needed
- 2 and three fourth cups of water
Preparation for vegetable rice:
- You need to wash and soak rice with fresh water at least 15 minute. Drain off the water and set aside.
- Chop all the veggies and slice onions. Chop mint and slit green chilies.
Step by step cooking method for Vegetable Rice:
Step no 1. At first you need to take a pressure cooker or pot and add oil or ghee in it. If making for lunch box, avoid using ghee. Add the following dry spices – curry leaf, cinnamon, garlic cloves, green cardamom, cumin seeds, and fennel powder.
Step no 2. You need to add thinly sliced onions and slit green chilies when the spices begin to sizzle,.
Step no 3. When the onions appear to be golden or brown in color, add freshly ground ginger garlic paste.
Step no 4. Sauté well until the raw smell of ginger garlic disappears.
Step no 5. Now you need to add mixed vegetables and chopped mint. You can use some common vegetables like peas, beans, carrots most of the time. You can also use potatoes and a handful of cashews.
Step no 6. Sauté everything well until the mint smells good. Usually it needs a couple of minutes. You can also add soaked and drained rice now and sauté for 2 to 4 minutes.
Step no 7. Add water and then salt. If you have sautéed rice in the previous step, i suggest you that you have to add hot water to cook otherwise rice grains may break.
Step no 8. When the water comes to a rolling boil, add soaked and drained rice.
Step no 9. Stir and cook the rice. There is some other method of cooking rice at this stage. Cover and lower the flame completely and cook for 4 to 5 minutes. You can apply this method both cooking in a pot or in a pressure cooker. When the pressure goes up, remove the lid.
Step no 10. Mix everything well. Fluff up the rice with fork.
Serve this delicious and healthy vegetable rice hot or warm with gravy.

Step no 1. You need to sauté dry spices in hot oil for a couple of minutes.
Step no 2. Sauté onions until they appear golden.
Step no 3. Sauté ginger garlic paste and make sure that the raw smell goes off.
Step no 4. Add all the vegetables and mint, sauté for 2 to 3 minutes.
Step no 5. Add water and salt.
Step no 6. Bring the water to a rolling boil.
Step no 7. Add drained rice and stir.
Step no 8. Cook on a medium flame until the water evaporates.
Step no 9. When the rice is soggy, cover with a lid or pressure cooker lid and lower the flame.
Step no 10. Cook on a low flame for 4 to 5 minutes. Switch off the stove.
Step no 11. At the time when the pressure falls down, remove the lid and fluff up the rice.
Step no 12. Serve vegetable rice hot or cold with simple gravy.
